Ingredients

  • 8 oz andouille sausage cut into 1/4" slices
  • 1 green pepper chopped
  • 14 1/2oz can stewed tomatoes
  • 1 c uncooked instant brown rice
  • 8 oz chicken tenders, cut crosswise in half
  • 12 c water
  • bunch scallions, sliced

Preparation

Step 1

1) heat 12" skillet over md heat til hot. add sausage and peppers cooking 5 minutes, stirring occasionally

2) stir in tomatoes, rice, chicken, water and salt; heat to boiling over high heat. reduce to low; cover and simmer 10 minutes or until rice is tender.

3) remove from heat and stir in scallions
