Tuscan Pate

Ingredients

  • 1 onion
  • 1 celery stalk
  • 2 carrots
  • 1 potato
  • Rosemary, garlic, sage
  • 2 slices bacon
  • 2 TBSP olive oil
  • 300 grams chicken livers
  • 100 grams capers
  • 100 grams anchovies
  • Dash of pepper

Preparation

Step 1

Chop onion, celery, carrots and potato and saute with bacon and spices in olive oil
Add chicken livers and braise with wine
Let the wine evaporate and then add a touch of tomato paste
Add capers, anchovies and pepper
Once the liver is cooked place in a food processor and cut very fine
If it is too thick add some chicken broth
