Blueberry Pancakes from Mix....excellent

Ingredients

  • 2 C of pancake mix
  • 1 1/2 C water
  • 2 C fresh blueberries
  • Butter to grease frying pan between each batter pouring
  • Pancake syrup or blended fruit using Vitamix

Step 1

1. Melt butter in microwave.

2. Mix pancake mix and water, whisking ONLY until very large clumps are gone, leaving small clumps. Small clumps allow the pancakes to be lighter. If the batter is whisked too much, the pancakes will be too dense.

3. Heat frying pan. Then, brush with butter. Do not use to much butter or the pancakes will fry like fritters.

4. Pour batter by 1/4 cup at a time or using a 4 oz. ladle into pan, smoothing out with the measuring cup to make them spread a bit.

5. Put a few blueberries, evenly spaced, on the top of each pancake and push them down slightly with spatula.

6. As soon as bubbles appear on the top of the pancakes and their edges seem to be drying and cooking a bit, turn them over with spatula.

7. If some of the batter oozes out or the blueberries roll out while flipping over, just push them back under the pancake and they will cook into the cake.

8 . If some of the batter gets on the cooked side of the pancake while turning over with spatula, just cook the second side until ready and then, flip it over for ten seconds to cook the raw batter on the other side.

9. To keep warm while cooking other pancakes, put on an oven-proof plate and place in oven warmed to 175 degrees. Do not leave them in the oven very long as they will dry out.

10. Sever with pancake syrup or fruit blended in Vitamix.
