Lobster Pot Pie

  • 2 tablespoons unsalted butter
  • 1/2 onion, diced
  • 1 carrot, diced
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas
  • 1/4 cup flour
  • 1 cup milk
  • 1 cup chix broth
  • 1/2 pound cooked lobster meat
  • 1/2 teaspoon dried thyme
  • salt an pepper
  • 1 large egg, lightly beaten
  • crust



Step 1

Preheat oven to 375. Melt butter in a med skillet over med heat. Add onion and carrot. COok stirring occastionally, for about 5 minutes. Add corn and peas. Stir in flour and cook 1 more min. Add milk and chix broth, stirring constantly. Cook until the sauce begins to thicken, ab 5 mins. Then remove from heat, addd lobster and thyme and season w/salt and pepper. Place in potpies. Bake about 35 minutes.
