Ingredients

  • for Dough:
  • 1 1/2 c lukewarm milk
  • 1/2 c sugar
  • 2 T shortening
  • 2 pkg active dry yeast
  • 1/2 t salt
  • 2 eggs (beaten)
  • 1/2 t vanilla
  • 5 to 5 1/2 c flour
  • for poppyseed filling:
  • 1 c ground poppyseed
  • one third c cream
  • one third c sugar
  • 1 t vanilla
  • 1 t honey
  • 1 beaten egg
  • 1/2 t lemon juice
  • 1 t butter
  • 1 t cornstarch
  • for prune filling:
  • 2 c prunes (boiled)
  • one third to 1/2 c sugar
  • 1/2 t cinnamon
  • 1/2 t lemon juice

Step 1

Mix milk, sugar and shortening. Add yeast, stir and let stand a few minutes. Blend in eggs, salt, vanilla and one half the flour and beat. Add the remaining flour, using the right amount to make it soft but easy to handle. Knead well and let rise in a warm place until about double in size. At the end of that time turn onto a floured breadboard. The kolaches can be shaped in two ways.
Either roll to about 1/2 inch thickness and cut out with a 3 inch cutter, or shape into 2 inch balls. Place on a buttered baking sheet. Let rise a short time. With the fingers, make a depression in the center of each 3 inch circle or 2 inch ball leaving a ridge of about 1/2 inch around the outside. Fill indentation with the fruit filling and let rise until light to the touch. Bake 20 to 25 minutes in a 400 degree oven or until browned. They can be brushed with melted butter when taken from the oven.

for prune filling:
Drain prunes, remove the pits and mash well with a fork. Add other ingredients and blend.

for poppyseed filling:
Mix all ingredients, bring to a boil and cook until thickened, stirring constantly. Cool and use a a filling.

Note: to garnish kolaches, roll 2 graham crackers until fine. Add 1 t sugar and 1 t soft butter. Work like pie crust and put in small daubs in center of kolaches.
