Ingredients
- 10 yukon Gold potatoes, about 2" in diameter
- 5-8 tbsp olive oil
- salt and pepper to taste
- herbs of choice: Rosemary, Oregano, etc.
Preparation
Step 1
1. Cook the potatoes to "almost done" by either microwaving them in batches for 5-7 mins or put some water on a rimmed cookie sheet, place potatoes on top and bake at 500F for 12-15 mins.
2. Preheat oven to 450F. All cooked potatoes to cool just slightly. Protecting your hand, smash each potato flat, to about 1/2" thickness.
3. Put 2-3 tbsp olive oil on rimmed baking sheet. Place flattened potatoes, in one layer, on the sheet. Sprinkle with salt and pepper to taste. Sprinkle on any fresh or dried herbs of your choice.
4. Bake in oven for 15 mins. Remove from oven and using a spatula, turn over the flattened potatoes to the other side. Drizzle some additional olive oil over all. Bake for another 15-20 mins.
