Ingredients
- 1 cup dry quinoa,cooked according to pkg directions
- 2 med avocados
- 3 oz baby spinach
- 8 oz cherry tomatoes
- 3 scallions
- Dressing
- 2 minced cloves garlic
- 2 Tbs red wine vinegar
- 2 Tbs olive oil
- 1/8 tsp salt
Preparation
Step 1
Cook quinoa,whisk dressing and set aside.Chop spinach,slice scallions.1/2 cherry tomatoes,dice avocado.
Toss cooked quinoa,while hot and toss with spinach leaves(should wilt) add scallions,tomatoes and dressing.Stir to combine. Ad avocado and lightly toss. Sere immediately.
