GRILLED BACON & FETA MINI PIZZAS

Ingredients

  • 4 strips bacon
  • 12 mini pita breads
  • 4 tsp red pepper jelly
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese

Preparation

Step 1

In a large skillet, cook bacon over medium heat, turning once, until browned and crisp, about 8 minutes. Transfer to paper towel-lined plate to drain. Chop bacon; set aside. To make ahead: refrigerate in airtight container for up to 24 hours.

Place pitas on rimmed baking sheet. Spread jelly over tops; sprinkle with bacon, red onion and feta.

Using metal spatula, carefully transfer pitas to greased grill over medium heat; close lid and grill until warm, about 4 minutes
