Ingredients
- 1 TB oil
- 2 lb ground beef
- 2 onions
- 2 cloves garlic
- 1 red pepper
- 2 stalks celery
- 1 medium zucchini
- 1 can tomatoes with liquid
- 2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp. dried basil
- 1 1/4 C rice or quinoa
Preparation
Step 1
1. Heat oil in large pot. Add ground beef, cook for 5-7 minutes, or until browned, stirring often.
2. Add onions, garlic, pepper, celery, zucchini, tomatoes with their liquid, salt, pepper, and basil. Stir well to combine. Heat until simmering. Stir in rice, quinoa.
3. Reduce heat, simmer, covered, for about 30 minutes, stirring occasionally.
