Fish Paprikosh

Ingredients

  • 1/4 cup butter
  • 2 garlic cloves, minced
  • 4 onions, diced
  • 2 tsp paprika
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 1/4 cup sliced ripe olives
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped green pepper
  • 1/2 dry red wine
  • 1/3 cup water
  • 1/2 cup tomato puree
  • 4 cups cod (or other fish") fillets, cut into 2-inch pieces

Preparation

Step 1

Heat oven to 350. In large skillet, melt butter over medium heat.Add garlic and onions; saute until onions are tender. Add paprika and mix. Stir in salt, pepper, olives, mushrooms, bell pepper, wine water and tomato puree. Bring to a boil; reduce heat and simmer 10 minutes over low heat,

Place fish in 3-quart casserole; top with onion mixture. Cover and bake 30 minutes or until fish flakes easily with fork. Top with sour cream and chopped parsley, if desired.
