Ingredients
- 1/4 c. feta cheese, finely crumbled
- 1/4 c. cream cheese, softened
- 2 Tb. mayonnaise
- 1 Tb. minced fresh thyme
- 1 Tb. minced fresh oregano
- 1 Tb. lemon juice
- 3 Tb. extra-virgin olive oil, divided
- kosher salt and black pepper to taste
- 10 (8" long strips) zucchini, sliced 1/4" thick and about 2" wide
- lemon zest and fresh thyme
Preparation
Step 1
Preheat grill to medium-high heat. Combine feta, cream cheese, mayonnaise, thyme, oregano, lemon juice, 1 Tb. oil, salt, and pepper for filling in a bowl.
Using remaining 2 Tb. oil, coat zucchini; sprinkle with salt. Grill zucchini, uncovered, over direct heat until tender, about 2 minutes per side. Set slices aside to cool.
Pat slices dry with paper towels and spread 1 tsp. filling evenly on each. Roll slices tightly. Top with lemon zest and thyme.
