Ingredients
- 6 large egg whites 1 teaspoon pure vanilla extract
- 1/4 cup pure maple syrup
- 3 cups shredded, unsweetened coconut

Preheat oven to 325˚F. Beat the egg whites in a stand mixer until they form stiff peaks. Gently fold in the maple syrup, vanilla, and coconut. Form into 1-inch balls and put on a parchment lined baking sheet. Bake for 15 to 17 minutes, or until lightly browned. Cool before serving.
