Ingredients
- 1 lb ground beef (or ground turkey)
- 2 tsp olive oil (divided)
- 1 onion (chopped)
- 2 tsp minced garlic
- 1/2 tsp thyme
- 1 tsp Hungarian paprika (or regular paprika)
- 14.5 oz petite diced tomatoes w/ juice
- 15 oz tomato sauce
- 1/4 cup water
- 1 head green cabbage (cut into 1-in pieces)
- salt & pepper (to taste)
- 2 cups cooked rice (brown or white)
- 4 oz shredded mozzarella
Preparation
Step 1
Cook meat until no longer pink. Pour into a bowl for later. In same skillet, heat 1 tsp olive oil. Cook onion until translucent and starts to brown. Add in garlic, thyme, and paprika. Cook for two more minutes.
Stir in tomatoes, tomato sauce, water, and cooked meat. Simmer 15-20 minutes, until thickened. Stir in cooked rice.
Heat 1 tsp olive oil in large stockpot. Saute cabbage until wilted and halfway cooked. Season to taste with salt & pepper.
Preheat oven to 350 degrees.
Spray 9x13 baking dish with cooking spray. Layer half the cabbage then half the meat. Repeat the layers. Cover with foil.
Bake 45 minutes. Remove foil and sprinkle cheese. Allow to melt, or bake additional 5 minutes.
