  • 1 teaspoon chopped garlic
  • 1 red pepper medium diced
  • 1 yellow pepper medium diced
  • 1 green pepper medium diced
  • 1 red onion medium diced
  • 2 nectarines diced
  • 2 plum tomatoes diced
  • 1/2 cup medium-diced fennel blanched
  • 3 cups cooked orzo
  • 1/3 cup red wine vinegar
  • 2/3 cups extra-virgin olive oil
  • Salt to taste
  • Freshly-ground black pepper to taste


Servings 4


Step 1

Combine garlic, all the peppers, onion, nectarines, tomatoes, fennel, and orzo and whisk together with oil and vinegar. Combine all ingredients well; season with salt and pepper. Let marinate for four hours.
