Ingredients

    nectarines diced

    cup medium-diced fennel blanched

    cups cooked orzo

    cup red wine vinegar

    cups extra-virgin olive oil

  • Salt to taste

  • Freshly-ground black pepper to taste

Directions

Combine garlic, all the peppers, onion, nectarines, tomatoes, fennel, and orzo and whisk together with oil and vinegar. Combine all ingredients well; season with salt and pepper. Let marinate for four hours. This recipe yields 4 servings.
