Smoky Sweet and Sour Cantaloupe

Ingredients

  • 5 strips thick-cut smoked bacon
  • 1 medium red onion, sliced
  • 1/2 cup Asian sweet chili sauce
  • 2 tablespoons Rice vinegar
  • 4 cups cubed cantaloupe

Preparation

Step 1

In a large nonstick skillet cook bacon until crisp. Transfer bacon to paper towel to drain; reserve 1 tablespoon drippings to skillet. Crumble bacon. Cook sliced onion in reserved drippings over medium heat until tender. Add Asian sweet chili sauce, Rice vinegar, cantaloupe and crumbled bacon; heat through. Serve over hot cookies Rice. Top with coarsely chopped cashews. Makes 4 servings.
