FRESH PINEAPPLE PINA COLADA

Ingredients

  • 1 small pineapple, peeled, cored, and cut into chunks (I had 3 1/2 cups)
  • 1 can 13.5 ounce can full fat coconut milk*
  • 3 tablespoons agave syrup or the sweetener of your choice*
  • 2 cups ice
  • 1/4 cup plus 2 tablespoons dark rum (such as Myers's)*

Instructions
Place the pineapple, coconut milk, agave syrup, ice and rum in a blender. Process until smooth. Taste and add more sweetener or rum as desired. Serve immediately and enjoy!
