Curry Chicken Salad Club Sandwich

Ingredients

  • WHISK:
  • 3/4 cup mayonnaise
  • 3/4 cup plain 2% Greek yogurt
  • 1/3 cup Major Grey’s chutney
  • 4 tsp. fresh lime juice
  • 1 Tbsp. curry powder
  • Salt and cayenne pepper to taste
  • COMBINE:
  • 5 cups diced cooked chicken
  • 3/4 cup roughly chopped roasted, salted cashews
  • 3 scallions, sliced
  • ASSEMBLE:
  • 12 slices white sandwich bread, toasted
  • 8 slices thick-sliced bacon, cooked
  • Green leaf lettuce
  • Tomato slices

Preparation

Step 1

Whisk together mayonnaise, yogurt, chutney, lime juice, and curry powder; season with salt and cayenne.

Combine chicken, cashews, scallions, then stir in 1 1/4 cups mayonnaise mixture. Assemble sandwiches by spreading 2 Tbsp. of the remaining
mayonnaise mixture on one side of 8 of the bread slices. Top 4 of the coated bread slices with lettuce and 1/2 cup chicken salad, then stack each with an uncoated bread slice. Layer each stack with another 1/2 cup
chicken salad, tomato slices, two strips bacon, and the final 4 slices
of coated bread. Cut sandwiches into quarters.
