Gorgonzola and Bacon Tart

Ingredients

  • 1 Refrigerated pie crust (half of a 15 oz. package)
  • 1/4 lb Apple smoked bacon
  • 10 oz Crumbled gorgonzola cheese
  • 4 Large egg yolks
  • 1 tb All purpose flour
  • 1/3 cup Heavy whipping cream
  • Fresh black pepper to taste

Step 1

Preheat oven to 450 degrees. Line bottom of 9 in diameter tart pan (best to have on with a removable bottom). Bake according to package directions until crust is golden brown. Cool crust completely.

Reduce heat of oven to 325.

Meanwhile, cook the bacon until crisp. Drain on paper towels and chop into small pieces.

Place cheese, egg yolks and flour into food processor and puree until almost smooth. Add cream and spin just a little in order to blend. Spread chopped bacon over the bottom of the crust and then pour the mixture from the food processor into prebaked pie crust. Smooth top and grind fresh black pepper on top.

In the 325 degree oven, bake tart until golden brown and set in center, about 25 minutes. Cool at least 1 hour.
