Ingredients

  • 4 c. thinly sliced unpeeled zucchini
  • 1 c. chopped onion
  • 2 tblsp. canola oil
  • 1/2 c. chopped fresh parsley
  • salt
  • pepper
  • 1/4 tsp. basil
  • 1/4 tsp. oregano
  • 2 eggs, beaten
  • 8 oz. (2 c.) shredded mozzarella cheese
  • pie crust
  • 2 tsp. Dijon mustard

Preparation

Step 1

Preheat oven to 375.

1. In a large skillet & saute zucchini & onion until tender, about 10 minutes.
2. Stir in parsley & seasonings.
3. In a large bowl blend eggs & cheese.
4. Stir in vegetable mixture.
5. Place dough in ungreased quiche pan.
6. Spread Dijon mustard over crust.
7. Pour mixture into crust & bake for 18-20 minutes.
8. Let stand 10 minutes before serving.
