By all accounts, they should just taste like your ordinary taco, but they don't; these guys are extraordinary. Although I think maybe their simplicity is exactly why they're so memorable; after all, simple, quality ingredients deliver the highest-quality results, right?

Ingredients

  • 16 ounces sirloin filet
  • Salt and pepper

  • 1 1/2 tablespoons lime juice, plus more for assembly

Directions

Place sirloin filets in the freezer, chill until very firm and easy to cut, about 8 minutes. Remove from freezer and chop into a small dice. Season liberally with salt and pepper.

Heat a cast-iron or nonstick skillet to a medium-high heat. Once pan is preheated, add oil. Add chopped beef and cook until crispy on all sides, about 4 to 5 minutes.

Pour lime juice over, cook until absorbed, about 30 seconds. If necessary, season with salt and pepper.

Place steak in tortilla and sprinkle with plenty of chopped cilantro, onion, and a squeeze of lime juice.
