Grilled Bananas Foster

Ingredients

  • 1/4 c. unsalted butter
  • 1/4 c. packed light brown sugar
  • 2 Tb. dark rum
  • 1 tsp. vanilla extract
  • 1/4 tsp. ground cinnamon
  • pinch of kosher salt
  • 2 slightly under-ripe banana, peeled
  • 4 scoops vanilla ice cream
  • 1/2 pint fresh strawberries, hulled and halved
  • 1/4 c. toasted chopped pecans

Preparation

Step 1

Preheat grill to medium heat.

Melt butter in a saucepan over medium heat. Add brown sugar, rum, vanilla, cinnamon, and salt. Cook mixture, stirring often, until brown sugar has dissolved. Keep sauce warm over low heat.

Grill bananas, covered, over direct for 1 minute per side. Remove bananas from grill; slice fruit into 2" chunks. Divide banana chunks among 4 serving bowls; top each with one scoop of ice cream. Add some strawberries and pecans; drizzle desserts with sauce. Serve immediately.
