Ingredients
- Spice Blend:
- ● 2 1/2 tsp chili powder
- ● 2 tsp cumin
- ● 1 1/2 tsp coriander
- ● 1 tsp oregano
- ● 1 tsp black pepper
- ● 1/2 tsp salt
- ● 1 1/2 tsp red pepper flakes
- Soup:
- ● 1 tbsp. oil
- ● 1 1/4 lbs. chicken (boneless, skinless) cut into pieces
- ● 2 cups chopped onion
- ● 1 1/2 cups chopped peppers
- ● 1 tbsp. minced garlic
- ● 1/2 tsp salt
- ● 1-2 cans of corn
- ● 1 (32 ounce) chicken broth
- ● 1 (28 ounce) can fire-roasted crushed tomatoes; undrained
- ● 2 cans small white beans
Preparation
Step 1
1. Prepare spice blend by mixing spice ingredients in small bowl
2. Heat oil in pan and add chicken
3. Sprinkle 1 ½ tbsp. spice blend over chicken
4. Sauté 8 minutes or until done and remove from heat
5. In a large pot, mix oil with onion, peppers, garlic, and salt
6. Sprinkle remaining spice blend over vegetables and sauté until vegetables are tender
7. Stir in chicken, corn, broth, beans, and tomatoes
8. Bring to a boil, then reduce heat and simmer for 15 minutes
