Roasted Chicken Enchiladas

Ingredients

  • Salsa :
  • 12 tomatillos
  • 2 jala
  • 1 onion
  • splash of vinegar
  • water
  • 1 tsp. cumin
  • 1/2 bunch cilantro
  • 2 limes, juiced
  • salt
  • 3 poblanos - skin, seed, roast
  • olive oil
  • 1 onion
  • 3 garlic cloves
  • 1 1/2 t. cumin
  • 1/4 C. all purpose flour
  • 4 c. chix stock
  • 1 roasted chix. (3#)
  • 1/2 bunch cilantro
  • salt and pepper
  • 12 corn tortillas
  • 1/2 # jack cheese

Preparation

Step 1

Roast the poblanos. Saute the olive oil, onion, and garlic cloves together. Add the cumin and flour. Slowly add the chix. stock. Add the roasted chix. and cilantro.
