Ingredients

  • 2 cups milk
  • 1 Tbsp butter
  • 1 1/2 Tbsp sugar
  • 2 tsp salt
  • 1 Tbsp yeast
  • 1/2 cup water
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 1 1/2 cups multigrain flour
  • 1 1/2 cups whole wheat flour
  • 3 cups white flour

Preparation

Step 1

1. Heat 2 cups of milk to very hot, (but it didn't scald) with 1 TBSP of butter (I heat it until the butter melts) 1 1/2 TBSP sugar and 1/2 TBSP and 1/2 TSP salt ((The reason for the strange measurements is because I halved a larger recipe so that I could do it in my Mixmaster.))

2. Meanwhile, proof the yeast with the sugar. Then add 1/4 tsp salt.

3. Put the milk mixture in the bowl with the yeast and add 1.5 cups multigrain bread flour and 1.5 cups whole wheat bread flour.

4. I mix it with a dough hook in my mix master until it's almost mixed and then add about 3 cups of white bread flour. I mix it until it forms a ball.

5. I knead it with the dough hook for about 4 minutes, adding more white flour by the tablespoon until it forms a nice smooth ball.

6. Let rise for an hour and a half.

7. Punch down and then form into loaves or buns.

8. Let rise another hour and a half, then cook at 350 for about 30 minutes...a little less in my oven, it might be longer in others. Mine seems to run a bit hot.
