Gorgonzola and Pistachio Salad

Ingredients

  • 1 (5 oz.) pkg. spring mix or mesclun mix
  • 4 oz. Gorgonzola cheese, crumbled
  • 3/4 c. shelled pistachio nuts
  • 1/2 c. dried cranberries
  • 4 Tb. balsamic vinegar
  • 3 Tb. hazlenut oil
  • 3 Tb. olive oil

Preparation

Step 1

In a medium bowl, combine spring mix, Gorgonzola, pistachios, and cranberries. In a small bowl, whisk together remaining ingredients. Pour dressing over salad, tossing gently to coat. Serve immediately.
