  • 1 cup buttermilk (or homemade dairy-free buttermilk**)
  • 1/4 cup water
  • 1 large beaten eggs
  • 1 large egg white
  • 1 cup potato starch
  • 1/4 cup cornstarch (or more potato starch)
  • 2 teaspoons xanthan gun (or guar gum for corn free)
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 teaspoon gluten free baking powder (Rumford's or Featherweight for corn-free)
  • 1 scant Tablespoon caraway seeds, for black licorice flavor (optional)
  • 1/2 cup raisins, cranberries (or other currants) (optional, but recommended)
