SOUPS & STEWS = Vegetable Soup

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • garlic
  • 2 quarts tomato juice
  • 15 oz frozen mixed vegetables
  • Can also add frozen hash brown cubes
  • 1 cup water
  • 2 beef bouillon cubes
  • 1 cup alphabet pasta or small pasta
  • Salt and Pepper to taste

Preparation

Step 1

In a large pot cook beef and onion and garlic until brown. Drain and add tomato juice, vegetables, water and bouillon. Bring to boil. Add pasta. cook uncovered for 6-8 minutes or until pasta is tender, stirring frequently. Add salt and pepper.
