Ingredients
- 2 lbs. baby carrots
- 3 Tb. butter
- 1/2 c. packed brown sugar
- 1/4 c. fresh orange juice
- 2 tsp. cornstarch
- 1/2 tsp. grated orange zest
- 1/4 tsp. ground ginger
- 1/4 tsp. salt
Preparation
Step 1
In a large saucepan, cover carrots with water. Bring to a boil over high heat,; reduce heat to low, cover and cook for 10 minutes, or until tender. Drain well. Set aside, and keep warm. In a small saucepan, combine butter and next 5 ingredients. Cook over medium heat, stirring constantly, until mixture boils. Boil for 1 minute, stirring constantly. Remove from heat; stir in salt. Pour mixture over carrots; toss well.
