Ingredients
- For Mudslide Brownies:
- Nonstick Cooking Spray
- 1 Package fudge brownie mix
- 3 Eggs
- 2/3 cup Vegetable oil
- 1/4 cup premade mudslide drink (T.G.I Friday's)
- 1 Package cream cheese (8 oz.)
- 1/2 cup sugar
- 1/2 cup miniature chocolate chips
- 1 Tbsp. instant coffee crystals
- For Mudslide Icing:
- 1 Stick butter, softened
- 4 cups sifted powdered sugar
- 1/3 cup premade mudslide drink (T.G.I. Friday's)
- 1 cup mini chocolate chips
Preparation
Step 1
1. Preheat oven to 350 degrees. Lightly spray a 9x13-inch baking dish with nonstick cooking spray; set aside.
2. For brownies, in a medium bowl, combine brownie mix, 2 of the eggs, the oil, and mudslide drink. Stir until well mixed. Transfer to prepared baking pan; set aside.
3. In a medium bowl, combine cream cheese, the remianing 1 egg, the sugar, chocolate chips, and instant coffee crystals; beat with an electric mixer on low speed until smooth. Spread cream cheese mixture over the brownie mixture. Using a knife, swirl cream cheese mixture into brownie mixture for a marble effect.
4. Bake in preheated oven for 30 to 40 minutes or until wooden pick inserted in the center comes out clean. Cool in pan on wire rack.
5. For mudslide icing; in a small bowl, beat butter with an electric mixer on low to medium speed for 30 seconds. Add powdered sugar, 1 cup at a time, beating until light and fluffy. Beat in mudslide drink until smooth.
6. Spread Mudslide icing over brownies. Sprinkle with mini chocolate chips. Let stand until icing is set. Cut into bars.
