Ingredients
- 1 large sweet onion, chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 c. sugar
- 2 Tb. grated fresh ginger
- 2 Tb. olive oil
- 6 large peaches, peeled and chopped
- 1/4 c. fresh lemon juice
- 2 Tb. chopped fresh cilantro
- 1/4 tsp. salt
Preparation
Step 1
Saute first ingredients in hot oil in a large skillet over medium heat 5 minutes or until onion is tender. Stir in peaches and remaining ingredients, and cook, stirring gently, 5 minutes. Serve warm or at room temperature. Store in an airtight container in refrigerator up to 2 days.
