Ingredients

  • ● 2 tbsps. oil
  • ● 3 ounces pancetta or bacon, chopped
  • ● 2 sprigs rosemary
  • ● 1 fresh sprig of thyme
  • ● 1bay leaf
  • ● 1 medium onion, chopped
  • ● 4 garlic cloves, chopped
  • ● salt and pepper to taste
  • ● 2 – 15 ounce cans of white beans
  • ● 1 cup tomato sauce
  • ● 2 cups water
  • ● 1 quart chicken stock
  • ● 1-1/2 cups ditalini pasta (small macaroni salad pasta)

Preparation

Step 1

1. Over medium heat, add oil and pancetta.
2. Once pancetta is browned, add the rosemary, thyme, bay leaf. Vegetables, and garlic.
3. Season with salt and pepper.
4. Add the beans, tomato sauce, water, and stock
5. Reduce heat to medium low and let soup cook until mixed and warmed thoroughly.
6. Serve with cheese on top if desired
