Ricotta Tomato Crepe

  • 1 egg
  • Ricotta
  • Tomato sauce

Step 1

Scramble an egg in a bowl. Pour into a pre-heated, Pam-sprayed, 6-inch nonstick frying pan and roll it around so the entire pan is thinly coated in egg. Cook 30 to 45 seconds until surface looks dry. Carefully lift the corner to flip – cook a few seconds more. Remove to plate, spoon on a line of ricotta, diced tomato or pasta sauce and season with salt & pepper – roll and enjoy! Tastes like lasagna… mmmmm. Don’t be intimidated by the crepe making, it’s just an egg.
