Ingredients

  • 5 ea Boneless, Skinless Chicken Breast
  • 1 ea Clove Garlic, Chopped Fine
  • 1 ea Box Frozen Spinach
  • 1 ea Red Pepper, Chopped
  • 2 Tbs Olive Oil
  • 1/2 cup Parmesan Cheese
  • 2 ea Eggs
  • 1/2 cup Breadcrumbs, Italian
  • 1/4 cup Provolone Cheese, sliced

Preparation

Step 1

Pound chicken to a flat and even thickness. Cook spinach with olive oil and garlic per box directions. Add red pepper and cook until tender. Add salt and pepper to taste. Spoon a thin layer of spinach over chicken breast and place slice of chese on top.. Roll chicken breast and close with toothpicks. Beat eggs in bowl. Roll chicken breasts in egg and dip in breadcrumbs mixed with parmesean cheese.

Bake at 350 for at least 45 minutes.
