Ingredients

  • ● 4 slices bacon, diced
  • ● 3 cans whole corn kernels
  • ● 2 jalapenos, seeded and diced
  • ● 1/2 cup sour cream
  • ● 1 cup shredded pepper jack cheese
  • ● 1/4 cup grated parmesan cheese
  • ● Salt and pepper to taste
  • ● 8 oz. cream cheese, cubed
  • ● 1 tbsp. chives; chopped

Preparation

Step 1

1. Heat a large skillet over medium heat
2. Add bacon and cook until brown and crispy. Set aside
3. Place corn, jalapeños, sour cream, and cheeses into a slow cooker
4. Season with salt and pepper to taste
5. Stir until well combined
6. Top with cream cheese
7. Cover and cook on low heat for 2 hours
8. Uncovered and stir until cream cheese is well combined
9. Cover and cook on high heat for an additional 15 minutes
10. Serve immediately.
