Penne with Creamy Tomato Sauce and Olives

Ingredients

  • 1 Tbsp olive oil
  • 1/2 cup diced onion
  • 2 Tbsp white wine or chicken broth
  • 1 (14.5 oz) can diced tomatoes with Italian herbs, undrained
  • 1/2 cup heavy whipping cream
  • 8 oz penne, cooked, drained and kept warm
  • 1 cup pitted ripe olives, drained and sliced
  • 1/2 cup (2 oz) grated Parmesan cheese
  • 1/4 cup sliced green onions

Preparation

Step 1

1. Heat oil in large skillet. Add diced onion; saute 2-3 min or until onion is tender.

2. Add wine or broth; cook 1 min.

3. Stir in undrained tomatoes, cream, pasta, olives and cheese; heat thoroughly, stirring occasionally. Sprinkle with green onions.
