Ingredients
- 3 pounds sugar
- 4 quarts cold water
- 2 quarts finely minced pineapple, canned or fresh
- 1 quart unsweetened grapefruit juice
- 1 quart lemon juice (made from concentrate)
- 3 quarts orange juice
- 1/4 cup each grated lemon and orange rind
- 1 1/2 tablespoons whole cloves
- 10 cinnamon sticks
- 2 tablespoons allspice
- 4 cups strong, hot tea
- Garnish: wafer thin lemon slices or frozen fruit cubes
Preparation
Step 1
Combine the sugar and water in a large soup pot. Bring to a boil, reduce the heat, and simmer for 5 minutes. Set aside to cool.
Strain the pineapple and place it and the fruit juices in a large punch bowl. Add the lemon and orange rind. Stir in the sugar-water mixture.
Put the spices in the hot tea and allow to steep for 15 minutes. Strain into the punch bowl.
Just before serving, add an ice block and garnish with lemon slices, or add fruit cubes.
