Ingredients

  • 4 cups coarsely chopped walnuts, 1/2 cup margarine, softened
  • divided 1/2 cup milk
  • 4 eggs 2 tbsp grated orange peel
  • 3 cups flour 2 tsp vanilla
  • 1 1/2 cups packed brown sugar 2 โ€“ 10 oz pkgs pitted dates, but into large pieces
  • 4 tsp baking powder
  • 1/2 tsp salt

Preparation

Step 1

Preheat over to 325 degrees. Grease two 8.5 x 4.5โ€ loaf pans. In large bowl with fork, mix flour, brown sugar, baking powder and salt. With pastry blender or two knives used scissor fashion, cut in butter or margarine until mixture resembles coarse crumbs. In medium bowl with fork, beat eggs, milk, orange peel and vanilla until blended. Stir into flour mixture just until moistened. Gently fold in dates and walnuts. Spoon batter evenly into loaf pans. Sprinkle remaining walnuts on top of batter in pans. Bake one hour and 20 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire rack ten minutes. Remove from pans and cool completely on rack. Makes two loaves, 12 servings each.
