  • Meringue:
  • 1 pastry shell baked
  • 1 1/2 cups sugar
  • 3 Tbs corn starch
  • 3 Tbs flour
  • Dash of salt
  • 1 1/2 cups hot water
  • 3 beaten egg yolks
  • 2 Tbs butter or margarine
  • 1 tsp grated lemon peel
  • 1/3 cup lemon juice
  • 3 eggs whites
  • 1/2 tsp vanilla extract
  • 1/4 tsp cream of tartar
  • 6 Tbs white sugar

Step 1

Preheat oven to 350.

In sauce pan mix first four ingredients. Gradually add hot water, stirring constantly. Cook and stir over high heat until mixture comes to boil. Reduce heat, cook and stir 2 minutes. Stir a small amount of hot mixture into egg yolks, then add egg yolks to hot mixture. Return to 2nd boil and cook and stir 2 minutes. Add butter and lemon peel. Slowly add lemon juice and mix well. Pour into pastry shell. Spread meringue over filling and bake in oven 12 to 15 minutes until meringue starts to brown on top.

Beat 3 egg whites with ½ tsp vanilla and ¼ tsp cream of tartar till stiff peaks form. Gradually add 6 Tbs sugar beating till stiff peaks form and sugar is dissolved.
