Ingredients

  • 3 cups sugar
  • 2 cups vinegar
  • 2 teaspoons mustard seed
  • 2 teaspoons celery seed
  • 6 cups thinly sliced squash (preferably yellow)
  • 4 cups thinly sliced green pepper
  • 4 cups thinly sliced onion

Step 1

Combine squash, peppers and onions. Soak in salt water for one hour and then drain. In the meantime, combine first four ingredients to form a brine and bring to a boil. Add the drained squash mixture to the brine and cook for five minutes. Put in jars and seal. May reuse any leftover brine.
