Ingredients
- 1 1/2 cups long-grain white rice, rinsed
- 3/4 cup coconut milk
- 3/4 cup chicken stock
- 1/2 cup water
- 1 tbsp vegetable oil
- Zest of 1/2 lime
- 1/4 bunch fresh cilantro, chopped very fine
- 1/4 cup slivered almonds, toasted
Preparation
Step 1
Place the rice, coconut milk, stock, oil and water in the rice cooker. Cook according to the rice cooker instructions. Stir in the zest and cilantro. Top with slivered almonds.
