Ingredients
- 2 granny smith apples, peeled and diced
- 2/3 cup sugar, divided
- 2 tsp cinnamon, divided
- 1/4 cup brown sugar
- 1/2 cup butter, at room temperature
- 2 eggs, at room temperature
- 1 1/2 tsp vanilla
- 1 1/2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp nutmeg (optional)
- 1/2 cup milk
- for the glaze -
- 1/2 cup confectioners sugar
- 1 - 2 tbsp cream, half and half, or milk
Preparation
Step 1
heat oven to 350
toss diced apples with 1/3 cup sugar and 1 tsp cinnamon - set aside
combine 1/4 cup brown sugar with 1 tsp cinnamon, and set aside
combine the flour, baking powder, salt, and nutmeg - set aside
cream together the butter and remaining 1/3 cup sugar
add eggs, one at a time, stopping to scrape the bowl in between, and then add vanilla
blend in half of the flour mixture
add milk, and then the remaining flour - mixing only until everything in incorporated
spread half of the batter in the bottom of a well greased loaf pan
top batter with half of the apples, and then sprinkle on half of the brown sugar mixture
repeat layers - batter, apples, and end with the brown sugar mixture
bake loaf at 350 degrees for 45 - 55 minutes
to make the glaze combine the confectioners sugar with cream or milk adding a teaspoon at a time to achieve desired consistency
cool in pan 15 minutes, remove from the pan and drizzle with glaze
