  • 3 eggs
  • 2 cups plus 3 TBS all purpose flour
  • 1 1/4 cups sugar
  • 1 cup milk
  • 1/2 cup olive oil
  • 2-3 tsps. baking powder
  • grated zest from 2 juicy lemons
  • Lemon Syrup
  • Juice from 2 lemons
  • 1/2 cup sugar plus 1 TB



Step 1

Mix first seven ingredients in one bowl-no need to beat
Put in a greased 9" pan lined with parchment paper-also greased (you could also use a springform pan)
Bake 40 min in a preheated oven at 350-or until a toothpick comes out clean
Set pan on rack to cool a little
Mix the lemon juice and sugar
Remove cake from pan and set on a large plate or platter
Poke holes all over the top
Slowly drizzle the lemon syrup so it seeps into the cake
Tastes better the next day and freezes well
