Ingredients

  • Rub:
  • 1/2 t. allspice
  • 1/2 t. cayenne pepper
  • 1 T. crushed red pepper flakes
  • 1 T. dry whole leaf thyme
  • 2 T. garlic powder
  • 2 T. hot Hungarian paprika
  • 3 T. onion poweder
  • 3 T. kosher salt
  • freshly ground pepper
  • chicken thighs
  • roasting pan:
  • 4 garlic cloves, smashed
  • 3 scallions, chopped
  • 1 pt cherry tomatoes
  • 2 T. honey
  • BBQ sauce
  • 1/4 c. lt brown sugar
  • 1/4 c. ketchup
  • 1 t. apple cider vinegar

Preparation

Step 1

1. In a small bowl, mix rub ingredients. Stir and rub each chicken thigh with the
mixture all over to coat.

2. Preheat oven to 225*. In roasting pan, add the smashed garlic, tomatoes and honey. Sprinkle over the scallions. Add the chicken over top the tomatoes covering them as much as possible. Shake any excess rub over top. Cover tightly with foil and bake for 1 hr. Remove the foil and return to oven for 30 more minutes.

3. Remove chicken from roasting pan making sure to gently shake off juices on the pan before transfer. Remove meat from bones with fork. Shred or chop meat down to size; set aside

4. Place roasting pan on burner over medium-high heat and add the lt brown sugar, ketchup and vinegar. Using a potato masher, smash the tomatoes into submission, then stir everything allowing it to simmer and reduce until slightly thickened. Add the shredded chicken back in and stir to coat. Serve over soft, thick-sliced bread or buns.
