Cut slices into the meat about 1" apart, not cutting all the way through. Sprinkle sea salt (about 1 T.) into each slice and then sprinkle generously with liquid smoke. Seal tightly in foil and put into a deep pan. Cook 1 hour @400 degrees, then lower to 250 degrees for at least 5 hours. Remove from foil and flake with 2 forks.
