Fish Tacos

Ingredients

  • 1/2 c. all-purpose flour
  • 2 Tb. chili powder
  • 2 tsp. cumin
  • 2 tsp. coriander
  • 6 (3 oz.) catfish fillets
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. vegetable or peanut oil
  • 8 (6") fajita-size corn or flour tortillas
  • Toppings: salsa, sour cream, lime wedges, fresh cilantro sprigs

Preparation

Step 1

1. Combine first 4 ingredients in a bowl.

2. Cut catfish into 1 1/2" pieces. Sprinkle with salt and pepper; toss in flour mixture, shaking off excess.

3. Cook catfish, in batches, in hot oil in a large nonstick over medium-high heat 2-3 minutes on each side or until done. Transfer catfish to a platter; serve with tortillas and desired toppings.
