Easy Crock-Pot Chili

Ingredients

  • 2 lbs. beef stew meat, cut into 1/2" cubes
  • 1 pkg. taco seasoning mix
  • 1 (14.5 oz.) can diced fire-roasted tomatoes
  • 1 (4 oz.) can chopped green chilies
  • 1 cube beef bouillon
  • 1 tsp. dried minced onion
  • 1/4 tsp. garlic salt
  • 1 (16 oz.) can ranch-style beans
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (11 oz.) can niblet corn, drained
  • Garnish: sour cream, shredded cheddar cheese

Preparation

Step 1

In a medium bowl, combine beef and taco seasoning, tossing gently to coat. Place beef in a 4-qt. slow cooker. Add tomatoes, chilies, beef bouillon, minced onion, and garlic salt. Cover and cook on Low for 5 hours, or until beef is tender. Stir in beans and corn. Cook, covered, on Low, for 30 minutes, or until heated through. Garnish with sour cream and shredded cheese, if desired.
