Stir Fried Cashew Pork

Ingredients
- 1/3 C hoisin sauce
- 2 T soy sauce
- 1/2 t red pepper flakes
- 6 t vegetable oil
- 1 pork tenderloin, cut into 1/4" strips
- 3 garlic cloves, minced
- 1 T grated fresh ginger
- 1/2 C unsalted cashews, whole
- 1/2 C unsalted cashews, chopped
- 1/4 C fresh whole cilantro leaves

Preparation
Step 1
Combine hoisin sauce, 1/3 C water, soy sauce and pepper flakes in a medium bowl. Heat 2 t oil in large nonstick skillet over med-high heat until just smoking. Add half of pork and cook until no longer pink, about 2 minutes; transfer to plate. Repeat with additional 2 t oil and remaining pork.
Add remaining oil to empty skillet and heat until shimmering. Cook garlic and ginger until fragrant, about 30 seconds. Add hoisin mixture, cashews, pork and any accumulated juices to pan and cook until thickened, about 1 min. Sprinkle with cilantro. Serve.
