Vegetable Marinade

A versatile and low fat marinade for veggie kabobs or grilled vegetables on the grill in the summer.

Ingredients
- 2 TBS Red Wine Vinegar
- 2 TBS Lemon Juice
- 3 TBS Olive Oil
- 1 TBS Fresh Basil, chopped
- 1 TBS Fresh Parsley, chopped
- 1 TBS, Dijon mustard
- 2 clove garlic, minced
- salt & pepper to taste
Preparation
Step 1
1. Mix marinade ingredients together. Pour over prepared vegetables and refrigerate for 2-4 hours.
2. Remove vegetables from marinade, skewer or grill about 10-15 minutes until tender, brushing occasionally with leftover marinade.
Use any vegetables you like including zucchini, mushrooms, bell peppers, sweet onions, eggplants, etc.
