Tater Tot Hotdish

By

Hailing from the Midwest, this classic American casserole is a humble mishmash of ground meat, cream soup, a bit of cheese, and rows of tots that turn golden as they bake. Oh, and vegetables, if you please.

Preparation

Step 1

Preheat the oven to 400 degrees F.

Spray a 6-cup square baking dish with nonstick cooking spray.

Heat a large skillet over medium-high heat.

Add the oil, then the celery, onion and 1/2 teaspoon of the salt, and stir to soften, about 3 minutes.

Add the beef, sprinkle with the remaining 1/2 teaspoon salt, and stir, breaking up to crumble until cooked through, about 3 minutes.

Stir in the broccoli.

Turn off the heat and stir in the soup.

Scrape into the prepared baking dish.

Sprinkle evenly with the cheese.

Arrange the tots close together in rows to cover the top.

Bake until the tots brown and the filling bubbles, about 30 minutes.
