Double Lemon Bars

Ingredients

  • 1 1/2 c. all-purpose flour
  • 1/2 c. powdered sugar
  • 3/4 c. (1 1/2 sticks) butter, cut into pieces, room temperature
  • 4 eggs
  • 1 1/2 c. sugar
  • 1/2 c. fresh lemon juice
  • 1 Tb. + 1 tsp. all-purpose flour
  • 1 Tb. grated lemon peel
  • powdered sugar

Preparation

Step 1

Preheat oven to 350 degrees. Combine 1 1/2 cups flour and 1/2 cup powdered sugar in processor. Add butter and cut in, using on/off turns, until mixture resembles coarse meal. Press into bottom of 9x13x2" baking dish. Bake until crust is golden, about 20 minutes. Remove from oven. Maintain oven temperature.

Beat eggs, 1 1/2 cups sugar, lemon juice, 1 Tb. plus 1 tsp. flour and lemon peel in medium bowl to blend. Pour into crust. Bake until mixture is set, about 20 minutes. Cool. Cut into 24 bars. (Can be prepared 1 day ahead. Refrigerate in airtight container.) Sift powdered sugar over top before serving.
